Top Players formerly of Cipriani Create a New and Improved Matto
(East Hampton, NY...March 2009) Matto (104 North Main Street, EastHampton,

www.mattorestaurant.com) has announced their reopening for the 2009
season on March 25th with some new twists. Owner Lidia Buonanno has
teamed up with top players from the grand opening task force formerly of
Cipriani Worldwide, Giovanni Zuanon and Pietro Molendini. The new team
will create a fresh concept at Matto featuring elevated quality, professional
service and affordable prices. Look for a menu full of homemade pastas
and desserts, specialty pizzas, fresh inventive salads, fresh local fish and
some of Matto's famous
dishes. Lunch and dinner will be served with a late night pizza bar and
lounge offering a special menu featuring pizzas, salads, bruschette, focacce,
crostini and specialty cocktail such as the signature Venetian style
Bellini. Take out will be available offering the full menu and the
specialty pizza bar for pizzas to go.
Worldwide Experience with Top Italian Brand - Cipriani
Zuanon, who is originally from Venice,
Italy, has been
involved in the restaurant business for 7 years. He began in a family
business near Venice
at the 5 star Al Tezzon Hotel. Since he began working with the Cipriani
group he has launched Cipriani in Porto Cervo, Sardinia; Cipriani in Mayfair, London; and Cipriani in Punta Del Este, Uruguay.
Zuanon also worked at Harry's Bar in Venice and Cipriani Downtown in New York City. His experience has also
expanded outside the restaurant, when he arranged catering for the Royal family
Al-Sabah of Kuwait.
Working with Zuanon, who will be director of operations of Matto, will be
Pietro Molendini as the executive general manager. Molendini, originally
from Rome, Italy,
comes from Cipriani Downtown in New
York City where he was manager.
Homemade Pasta, Fresh Salads and Creative Italian Entrees
Matto's menu will
continue to offer Italian cuisine with an emphasis on freshness and
quality. Antipasti will range from $8 - $17 and sample dishes include:
tuna tartar $13 with pistachio nuts, zucchini and cilantro and Bresaola della
Valtellina $15, dry cured beef with arugula, tomato and parmigan reggiano.
Salad choices will range from $10 - $14 with dishes such as Insalata Matto $13,
with radicchio, endive, onions, cherry tomatoes, peppers and Gorgonzola with a
splash of balsamic vinegar reduction drizzled with olive oil and Insalata di barbabietola
$14, with red beets, asparagus, walnuts, grapefruit and goat cheese.
Homemade pastas range from $15 - $23 and include: Tagliatelle alla Contadina
$20, homemade tagliatelle with cherry tomato, zucchini and zucchini flower
pesto; Pappardelle al funghi e rucola $21, homemade pappardelle with mixed wild
mushrooms and arugula; and Tagliolini al gamberi $19, homemade tagliolini with
shrimp and zucchini. Entrees are in the $15 - $38 range featuring
grilled lamb chop with string beans and pearl onions $38; breaded chicken
breast with arugula salad and roasted red pepper sauce $23; and wild salmon
with leek sauce $27. All desserts are $9 and include tiramisu, chocolate
mousse cake, homemade gelato and Gorgonzola cheese topped with a touch of
honey, walnuts and a splash of Lagavulin 16 year old whiskey.

Matto will be open seven days a week starting March 25th.
Dinner will be served from 5 p.m. until closing and lunch and pizza bar service
will be served on weekends from 12 noon until closing. Matto to go
service will available during lunch and dinner offering the full menu and
specialty pizzas. Specialty pizzas range from $10 to $24 and include:
Matto focaccia, with Parma
prosciutto, arugula, robiola and truffle oil and Pizza Capricciosa, with
mushroom, prosciutto, olives, eggs, tomato and mozzarella. Happy hour
will be offered daily from 5 - 6 p.m. with
reduced cocktail prices. Beginning May 1st, Matto will be open for lunch
and dinner seven days a week. Starting at 10:30 p.m. on Friday and
Saturdays, the late night pizza bar & lounge will offer a bar menu until 2
